Cinco de Mayo

Cinco de Mayo, otherwise known as the anniversary of the Battle of Puebla, is a holiday celebrated by many. For some, it’s a cultural day full of parades and festivities. For others, it’s all about the food. I fall into the latter category. I LOVE Mexican food. I could eat it for breakfast, lunch, and dinner. I’m always ready to change into my food fiesta pants…they allow for extra stretch.

Since Cinco de Mayo is just over a week away, I began thinking about how I want to celebrate. Most years, I just whip up some tacos or enchiladas and call it a day. However, this is my first Cinco de Mayo as a food blogger and I want it to be a true food celebration! So, I updated to the latest version of Cinco de Mayo. Cinco de Mayo 2.0. SIETE de Mayo!

SIETE Foods

If you’ve read my post “A Few of My Favorite Things – Ingredient Edition”, you’d know a little bit about SIETE Foods. The SIETE brand prides themselves in being food allergy and Paleo diet friendly. They have products that are grain free, dairy free, soy free, gluten free, vegan, and more.

They have all the products you need to cater a spectacular fiesta! Soft tortillas, crunchy taco shells, taco sauce, taco seasoning, tortilla chips, churro strips, and most recently…Mexican cookies! All with simple ingredients and amazing flavor! It’s not hard to fall in love with this company.

The Menu

I got straight to work. Which SIETE products were going to be invited to my celebration this year? As many as I could find. I wanted hard shell tacos, taquitos, chips and salsa, and of course…dessert! What a feast this meal was turning out to be.

After returning home from our local health food store, I decided I couldn’t wait. I got to work right away! I browned the ground beef, diced up my toppings, heated up the hard shells, and then started filling and frying the taquitos. The end result was a modified Mexican charcuterie display, and it was glorious! I couldn’t wait to dive in…so I did! Stephanie’s kitchen, party of one!

The Recipes

SIETE de Mayo Fiesta

Ingredients

  • Tacos and Taquitos
  • 2lb ground beef

  • 1 small onion, diced

  • 2 small clove garlic, minced

  • 1 package SIETE taco seasoning, 2 if you like it spicier

  • Salt and pepper to taste

  • SIETE hot sauce

  • Taco toppings of choice, optional

  • Tacos
  • SIETE hard shell taco shells

  • Taquitos
  • SIETE soft shell tortillas

  • Frying oil

Directions

  • Add the onion and garlic from both recipes to the 2lbs ground beef in a large skillet and cook until no longer pink. Stir occasionally. Season with salt and pepper to taste.
  • While the beef mix cooks, dice up your toppings of choice and heat the SIETE hard shell taco shells according to the directions on the package.
  • When the meat is cooked through, add in taco seasoning and 1/3 cup of water. Cook until well combined and heated through. Divide meat mixture into two dishes. One will be served with the SIETE taco shells, the other will be used to fill the taquitos.
  • Taquitos
  • Wipe your ground beef skillet clean, and add in 1/4in of oil to the pan. Heat until ready to fry.
  • Microwave the thawed SIETE soft shell tortillas between two damp paper towels for 30-45 seconds. This helps prevent ripping when rolling.
  • When the oil is hot enough to fry, add ground beef to each SIETE soft shell tortilla and carefully place seem side down into the pan. This can be a slow, delicate process as the meat may want to fall out or the tortilla may unroll before making into the oil. Go slow, be patient, and watch out for the hot grease splatters!
  • Once brown on one side, flip to brown the other side. Once both sides are golden brown, carefully remove the taquitos. Allow the oil to drip out of the ends before placing it onto a paper towel lined plate to cool

  • Once both recipes are complete, serve hot with your favorite toppings and SIETE tortilla chips.
  • Don’t forget to finish off your meal with SIETE Mexican cookies or shortbread!

Step by Step Visual Guide

Step 1

Add the onion and garlic from both recipes to the 2lbs ground beef in a large skillet and cook until no longer pink. Stir occasionally. Season with salt and pepper to taste.

Taquito Step 1

Wipe your ground beef skillet clean, and add in 1/4in of oil to the pan. Heat until ready to fry.

Taquito Step 2

Fiesta Time!
