Sweet Fix
If you’ve ever been on a low carb diet for an extended period of time, you understand how drastically reduced your sweet tooth becomes. Suddenly, you start noticing how sweet fruit, and even some vegetables, begin to taste. The need for a sugary meal chaser is gone and you don’t really miss it…until you do.
Parties, holidays, date nights, special occasions, or just a moment of self care might leave you wishing for a small, sweet something that won’t totally derail your hard work train. After all, it’s not a graceful departure. Falling off the moving low carb train will leave you bouncing down the track while the train speeds off into the distance. All you can do is sit there knowing how difficult it’s going to be to catch back up. It’s also going to leave some bumps and bruises.
How I Started
Several months after starting the paleo diet, I had lost almost 20lbs, had more energy, and less inflammation. It wasn’t an easy process, but Pinterest made my life a whole lot easier. I had a massive board full of Paleo meals, sides, drinks, and even desserts to pull from when my menu started getting stale.
As I was scrolling through the Pinterest feed of low carb, heathy suggestions I noticed a post that said “Chocolate Covered Snicker Filled Dates.” Eww, sounds awful doesn’t it? Just kidding. Of course it got pinned straight to my dessert board.
The next round of grocery shopping provided me with all the ingredients for my little experiment. Of course, I can’t do anything by the recipe, so I made a few adjustments. Tweak It Like It’s Hot!
The original recipe calls for peanuts and peanut butter. I chose to substitute crunchy SunButter for a more allergy and paleo friendly product. I also chose to use Enjoy Life chips, so I eliminated the coconut oil. Enjoy Life brand morsels melt beautifully and do not require the extra ingredient…or calories.
After the first time making these delightful goodies, I knew the little batch the original recipe made wasn’t going to cut it for my mini army of eaters. I’d also rather make the big mess once then making it repeatedly when the container gets empty. So, I also adjusted the amounts in order to compensate. They can always be frozen for later enjoyment.
Paleo Date Snickers

48 Medjool Dates
1/2 cup SunButter, I prefer crunchy
2 bags Enjoy Life morsels
1/2 cup Blue Diamond almonds, chopped finely
Directions
- If you bought pitted dates, skip this step. Otherwise, make a slice (hot dog, not hamburger length) and remove the pit inside. Do not cut all the way through or it will make the process more difficult later. Also, remove any bits of stem still left on the ends.
- Take a pitted date, and insert a small amount of SunButter. Put the filled dates on a tray and pop them in the freezer for 20 mins. Doing this helps keep the SunButter from running out and speeds up the chocolate hardening process.
- While your dates are setting up, put your chocolate chips into a microwaveable bowl. Microwave in 30 second intervals and stir in between to avoid burning.
- Remove your dates from the freezer. The SunButter will still be wet but your dates should be firm. Drop each date, one by one, into your chocolate. Carefully drizzle the tops until fully coated. Use a fork to lift the date out of the chocolate. Tap the fork gently on the side of the bowl to remove extra chocolate.
- Gently lay the chocolate covered date onto a cooling rack and top with chopped almonds. Repeat steps 4 and 5 for the remaining dates. If your bowl of chocolate starts setting up, pop the bowl back in the microwave for 30 second.
- Once all the dates are coated, pop them back into the freezer for 5-10mins to harden. Store in an airtight container in the fridge for up to a week, or pop some in the freezer for later.

Step 1
