Do you ever feel like no matter how hard you try, you’re constantly tripping your way through life? For those of us “clumsies”, let me clarify that I am not speaking literally. As much as I love a good slap-stick comedy moment (and trust me, I have plenty of them), in this particular case, I’m speaking metaphorically.

Maybe your calendar is bursting at the seems and you accidentally forget an appointment or two. Or, maybe you’re struggling to juggle the work, life, and home balance. I mean, you’d have to be an alien to successfully conquer the ever-growing list of 21st century expectations with your mental health still intact. Am I right?

As a recovering perfectionist, I know the crushing weight of expectations all too well. Disney’s Encanto character Louisa said it best. “Pressure like a drip, drip, drip, that’ll never stop, woah. Pressure that’ll tip, tip, tip ’til you just go pop! Woah oh oh oh.” If you have young kids, I’m willing to bet you sang that…LOL!

A little over a month ago, I was at my Encanto “popping” point. I had been sick with the world’s worst cold for two weeks. Right about the time I started to feel better, my son got strep throat and I got a nasty case of pink eye. My house was declared an official disaster zone. I derailed from my diet and gained 10 lbs. My kids reverted to prehistoric savages, only coming out of their rooms to raid the pantry and grunt. My mile long to-do list was now two miles long. I had reached my physical, mental, and emotional expiration.

At this point, you’re probably wondering what any of this has to do with eggs. Egg-cellent question! When those miserable weeks had FINALLY ended, I found myself reflecting back over that time. I realized how much stress that meals (particularly breakfast) caused during an already difficult time. I was too sick to cook, too sick to drive for takeout, and there’s only one place that delivers to our house (and Domino’s isn’t open for breakfast…shucks!).

I’d prefer to never be in that situation again….at least if I can help it. So, I decided that stocking my freezer full of premade breakfast items would be an underrated act of self care. One of my favorite items to have on hand are these easy make ahead egg bites!

As it turns out, these egg bites have already been a life saver for more than just sick days. They’ve been perfect for late school mornings, lazy weekends, and busy weeknights. It’s an amazing feeling when breakfast is quick, easy, healthy, and leaves almost zero mess for later. These egg bites are also highly customizable! Which means they never get boring and can be made for almost anyone. How much better does it get than that?

Let’s Get Crackin’!

The recipe for these egg bites was actually based off of one of my FAVORITE recipes from Paleo Running Mama…paleo breakfast casserole. I cut the recipe in half and tweaked the filling ingredients to what I had on hand.

In my egg bites, I used bacon, spinach, red bell pepper, brussel sprouts, and green onion. But, you could easily sub out or in whatever fillings you heart desires. Here are some fun ideas…

  • Ham
  • Steak
  • Any Cheese
  • Hashbrowns
  • Tomatoes
  • Fresh Herbs
  • Italian Seasonings
  • Sausage
  • Onions
  • Sweet Potatoes
  • Asparagus
  • Artichoke
  • Salsa
  • Greek Seasonings
  • Chorizo
  • Garlic
  • Mushrooms
  • Broccoli
  • Avocado
  • Queso
  • and more…

All you have to do is petitely dice your fillings of choice and layer them in a mini muffin tin. In a measuring cup or bowl, whisk the eggs, seasonings, and milk (I used coconut milk for non-dairy). Carefully top each cavity with the egg mixture. Give the pan a gentle shake so the egg fills in all the gaps. Then fill any cavities that have more space. Bake. Cool. Transfer to a freezer container or bag. Then VOILÀ! A easy, microwaveable breakfast anytime you need it!

Conclusion

Hindsight is always perfect! There’s no way to fully prepare for everything all the time. But, I would like to imagine that having these little golden nuggets of sunshine readily available in my freezer would have made the previous few weeks just a little bit easier. I’d also like to think that enjoying an easy, clean, healthy breakfast each day would have kept me on my diet track and started the day off a little bit brighter. Even if my day only consisted of changing into clean pajamas and binge watching Only Murders in the Building.

Ingredients

  • 6 eggs

  • 3 tbsp milk (I like full fat coconut milk from the can)

  • 1/4 tsp salt

  • 2 tbsp nutritional yeast, optional

  • 1/4 tsp garlic powder

  • 1-2 cups mixed fillings of choice, petitely diced

  • pepper or seasonings to taste.

Directions

  • Preheat the oven to 375. Grease each cavity of you mini muffin tin. Or, if you prefer, you can use mini muffin wrappers instead.
  • Fill each cavity two thirds of the way full of toppings.
  • In a separate bowl or measuring cup, whisk together the eggs, milk, salt, nutritional yeast, and garlic powder.
  • Carefully pour the egg mixture into each cavity until just full. Gently shake the muffin tin so the egg seeps into each gap between filling. Top any spaces off as needed.
  • Bake for 15mins, or until middles are set. Allow to cool in the tin before gently removing.
  • Transfer to a freezer safe container or bag and freeze until ready to use.
  • When you’re ready to eat, pop the desired amount of egg bites onto a plate and microwave for 1min. Increase microwave times by 30 seconds, if needed, until you reach desired temps.
